Sugar Art & Finishing Touches

These are used on our decorative candy and gift elements — crystal toppers, sugar sticks and finished presentation pieces — rather than being mixed into the loose leaf itself.

Isomalt

A sugar substitute made from beet sugar. Technically a sugar alcohol (polyol): the sucrose is enzymatically rearranged and hydrogenated, which makes it far more heat-stable than ordinary sugar. Because it resists caramelizing, it can be melted and cast into perfectly clear, glass-like edible decorations — the crystal toppers, sugar shards and stirrer pieces on our gift sets. It has roughly half the calories of sugar, a much lower glycemic impact, and does not feed the bacteria that cause tooth decay. It dissolves completely in hot tea, adding a mild sweetness. Vegan, gluten-free and dairy-free. As with all sugar alcohols, eating a large quantity at once may have a laxative effect.

Edible Gold Dust

A fine food-grade shimmer powder brushed or dusted onto decorative elements for a metallic gold finish. Sold as edible luster dust — a mica-based pearlescent pigment with approved food colorants, or, in the premium version, genuine edible gold (E175). Flavorless and used in trace amounts, purely for appearance.also listed as: luster dust, gold luster, edible glitter

Gel Food Coloring

Concentrated food-grade color in a water- and glycerin-based gel, used to tint our sugar and candy decorations. Because it is highly concentrated, only tiny amounts are needed. All colors used are approved food dyes.also listed as: gel color, food coloring

Flavor

Natural Flavor

Where a blend lists "natural flavor," it means a food-grade aroma derived from natural plant, fruit or spice sources, applied to the leaf or fruit in very small amounts. We list it simply as "natural flavor" — the same wording used on our packaging.
